No. That's not healthy for anyone, especially a diabetic. If you are a type 1 you're going to need a big shot for all that bread and the eclair.

  4. Is this a trick question?

Every diabetic knows that you aren't supposed to eat bread & eclairs. You would have been better off eating some steak and a salad with that iced tea.

The diet iced tea doesn't counter a thing. Although it can slow the spike a little, but not much.

The bacon has nitrites and nitrates in it - both can cause your blood sugar to spike.

So, the answer is a qualified NO!

  5. Nitrates cause blood sugar to spike? I enjoy food with nitrates all the time--hmm, yummy nitrates--and they've never, not once, given me a blood sugar spike.

Well you said you took insulin. That is good. This is what I am going to tell you, it is perfectly okay to have a treat like a bacon sub and an eclair every once in a while. If you ate this everyday, I don't think you would be or feel healthy. I have to disagree with another poster saying that you shouldn't eat bread. What are they talking about? You CAN eat bread, it just should be "better" bread like whole grain wheat, not white bread. I know that if you only eat carbs that isn't good for you, but eating no carbs is not healthy either. So yes, this is okay right now, just don't have it frequently.
